Unten Drunter is proud to present an exhibition by Carl Boutard (SE) in collaboration with Koh-i-noor, Copenhagen.

During Carl Boutard’s research-work for the exhibition, he wrote us the following:

“The Danish song, Der bor en bager (There is a baker) is about my great-grandfather's father, Charles Boutard. He had a bakery on Nørregade in Copenhagen, which he opened after he moved from Paris in 1843.

At the exhibition, I am representing my ongoing research on the baker through the material I could find about him in the form of interviews with family, photographs, objects and a facsimile of baker's recipe book and a few samples from this.

At the time of writing, my research brought me to New York, where the oldest living relative of the baker has settled. The story about the baker is not just about pretzel-shaped pastries and Christmas cakes, but it also shows the naturally occurring of everyone should be allowed to immigrate. It is a journey that spans five generations from France to Denmark, England, Sweden, USA, Switzerland and Australia. Also, the story of the baker shows, that what we assume as typical Danish or Swedish is not necessarily so”.

Den prisbelönte konditorn David Fernandes på Patisserie David i Malmö tillverkar en tårta för utställningen ur Sockerbagarens receptbok från 1853.

Gateau Neapoltain gjord av konditor Patisserie David efter skiss i bagarens receptsamling.Tårta och recept samt ett porträtt av familjen Boutard från omkring år 1895. Bagaren med hustrun Ginga, sonen Ernest och dennes fru Clara samt deras barn Hjalmar, Dora och Mary.




Besökarna bjöds små mördegskakor med apelsinkräm ur receptsamlingen, även de bakade av Patisserie David i Malmö.




Konstnären visar skissen av tårtan för utställnigens besökare.
